NMFIT Cookie Recipe

With temptation lurking everywhere for the next few months finding ways to revamp some of your yummy favorites is a great way to curb unwanted calories! I came up with recipe below for when I am craving a guilt free snack!

What you will need:

  • 2 1/2  cups of wheat flour pancake mix
  • 1  1/2 teaspoons of chia seeds
  • 1/2 cup of vanilla protein powder of your choice
  • 3/4 cup of olive oil 
  • 1/2 cup of almond milk
  • 2 whole eggs
  • 2 tablespoons of brown sugar
  • 1/2 a banana (smashed)

(Optional 3/4 cups of one or all of the following: unsweetened chocolate chips, almonds, sunflower seeds or raisins)

Add all the ingredients together into a large mixing bowl. Blend either with a mixer or a wooden spoon. 

Directions:

Pre-heat oven for 375 degrees.

Place mixed contents in the freezer for about 15 minutes, this help with molding the cookies onto the cookie sheet. 

Mold cookie down into small balls onto non-stick cookie sheet

Bake for 15-20 mins until the edges are golden brown. 

Cool and serve! Enjoy:)
